The email address in the sender field should show the SENDER's email, not the admin's email.
It is so annoying, as a admin, I got reply from users, but the users really want to reply to the sender, not admin.
William, I think that you see the method that you see here on moodle.org, that your email address is used (because you are a participate) instead of something like forum@moodle.org.
My moodle install has always seemed to do this without me telling it to, so your post made me wonder where to set this.
One place to look is Site Administration|Plugins|Activity Modules|Use email address in reply. Mine is set to the default value, "Yes".
Some other folks here on moodle.org might have other ideas for you.
