I am having great difficulty using the grade book in the new version of Moodle. When I open the grade book I have every forum showing. How do I take these items out and only show the grades for the quizzes my student shave just completed?

You could create a separate category for the forums, and then hide or collapse that category. This won't remove them completely, but it will get them out of your way.
