Too much information could also be called noise, as in signal-to-noise ratio.

There might be some scope for different opinions on this, but the consensus the Moodle project reached is that this icons do convey useful information to the user: the type of each activity. Therefore, it is best for them to have alt text, so they do.

That isa good point. The way to get this fixed is to create a bug report in the Tracker. https://moodledev.io/general/development/tracker
I think it depends on the behaviour. What you describe is how it woul work for an Immediate feedback quiz, but not for Deferred feedback.
