Probably the best way to do it is to export them as GIFT or Moodle XML format, then edit the file, then re-imort them into a new category.

The enable roles override page should probably do something to indicate which roles do not have the moodle/role:override capability - so you know that there is no point letting teachers overeide the studnet role until you have given them that capability.
Go to Admin -> Server -> Debugging, and turn on debug mode.
Probably what is happening is that something (memory?) is running out, but an error message telling you what the problem is won't be displaid unless you have debug on.
Once we know exactly what the problem is, there is more chance of being able to help you.

I have spent most of this week squashing quiz bugs. For the first time in ages, there are fewer than 200 open issues assigned to me on http://tracker.moodle.org/ 
So hopefully we are getting into a pretty good shape for the Moodle 1.9 release, which should hopefully only be a week or two away.
So, if you have time, now would be a really good time to try out Moodle 1.9 beta, test the quiz, and report bugs. Particularly if you have lots of quizzes in your system, and can take a copy of it, and try upgrading the copy.
And thanks to all the people who have been testing the quiz already.

Can you tell us more about your web server. PHP version, Windows/Linux, etc.
