What do your students see when they click the 'View grades' button? I just set up a Q and A forum on our School demo site with a rubric, and students are able to see it before posting. Can you also confirm what theme you are using?

Have you created groups in your course and added students to them?

You can use Restrict access and Activity completion for this, but you will manually have to decide the exercises which each student will have access to.
You can log in with the username manager and password moodle to our School demo site (it gets reset every hour on the hour so I suggest you log in about 5 past the hour to be sure of having a 'clean' version) and then you can back up and download any of the courses which interest you -making sure you back them up with user data so you can see the gradebook in action.
