Hello Susanna. Where an activity has an 'Expect completed on.. " date, that is shown in the Timeline block on the dashboard, and not on the course page/within the activity.  It is part of the Activity completion settings within an activity.
However, when you see deadlines/dates, on the course page it is because you have set a date in the 'Availability' settings of an activity such as an Assignment or Forum.

Hello Susanna. It's not actually all items with manual completion but just Files (I see you have a word document there for example), Labels and URLs. The reason for this is that depending on how you set the display for your file (or URL) it might not be possible to show the manual 'Mark as done' button when clicking on the file, so it needs to be shown on the course page. Yes, there are two ways to do this. One way is to create an Assignment activity but in the settings uncheck all the submission types (so students cannot upload a file/type text) and then you basically use this to record their scores. The other way is to manually create a 'grade item' in the gradebook and add the scores directly into the gradebook.
