Hi Steve. As administrator you can specify which is the default editor on your Moodle from Adaministration > Site administration > Plugins > Text editors > Manage editors. You can also disable Atto if you want to. I don't understand why you don't see the regular TinyMCE editor once you have selected it in your profile - are you saying that when you select it in your profile and then you go back to the course page to edit your course you don't then see the TinyMCE editor? If you are missing some icons in the TinyMCE editor then you can put them back from Administration > Site administration > Plugins > Text editors > TinyMCE HTML editor > General settingsSee Tiny MCE editor in the docs
As I said before, I'm led to understand these changes (removal of items such as colour) were done in order to make the default Atto editor more accessible. If you see at around 48 seconds into this video you see what I mean - adding colour brings up accessibility warnings.
