When you can get your organisations to upgrade to Moodle 2.7, you will be able to do this. See Grade viewer

Could you try going back to that course and removing its course completion settings? And then you should be able to remove it if it isn't already removed? Sorry but this seems to be a bug; perhaps you'd like to vote for it? MDL-27114
Hello and welcome to Moodle I just looked at your site - very worthwhile and good luck with the online courses. Please feel free to come back and ask as many questions as you wish but do bear in mind the Site policy It's best if you ask one question at a time as that makes it easier for people to respond. Also- there are different forums for different bits of Moodle and so your quiz question for example, should go in the Quiz forum. Next time , feel free to post in the appropriate forums for a quicker and more specialised response.
As for your first questions (which I will answer here this time )
1) Yes
2) Yes
3) Yes
4) Not sure; I am not technical, but if you can, it's not an obvious thing
5) docs.moodle.org will give you all the documentation you need and for working examples try school.demo.moodle.net
6) At the moment it is not possible to subscribe to only one forum thread but it should be possible in a few months.
Quiz question: No; I don't think you can; you need to make a new question.
Il y a une suggestion dans les forums anglophones: https://moodle.org/mod/forum/discuss.php?d=257769#p1117773
The Teacher role can add assignments and grade them; the Non-editing teacher role can't add assignments, but they can grade them or edit the grades. Sometimes however, there is a need for a role which can view assignment grades (or other) but not actually allocate grades or modify them.
The Grade viewer role - which might just as easily be called the Moderator role, Inspector role or Facilitator role - is a custom system role giving a user access to any course to view the grades but not do anything with them. Typically, you might want to give this role to a visiting exam board moderator who needs to verify student assignment grades but cannot obviously change them. A regular teacher would see the assignment grades like this:

A user with the Grade viewer role would see the same screen like this:

Please try out the role and feel free to add improvements where you feel they would be useful
