I suspect that roles in 1.7 would make this possible for you. You could give your students the ability to edit only the book mod, I think.

I have used this Skype add-on in the past and it has worked pretty well - http://www.unyte.net/. May not be robust enough for you, though.

We are using the CMS plugin with our 1.6.x site without problems AFAIK. We love it!
It seems to work well on the course level, too, for us, by the way.
