I see, my wording above, in "Obviously, a Course_backup would be the right thing", is not good. What I wanted to say is that Course_backup has the feature you are looking for. But it comes at a price. (Well, that too is to be expected, isn't it?)

In my understanding you have two issues;

1. You are happy with your https://docs.moodle.org/en/Site_backup but it is tedious to recover a single course from them.

Obviously, a https://docs.moodle.org/en/Course_backup would be the right thing.

2. Your moodledata is 400 GB big

The question is whether you consider that normal. If not you need to dig deeper. Unfortunately it is not trivial to understand the files in moodledata from starting from basics. I would search through Moodle plug-ins and look for other voluntary code created specifically for this purpose.

There _is_ a WYSIWYG editor in Moodle. In fact, in the recent versions, there are more than one. Fatefully they are called "text editors". Visit the forum "Text editors" https://moodle.org/mod/forum/view.php?f=224&page=6 (and its documentation).
