All browsers on iOS are Apple WebKit. They're all using the same browser engine, same bugs.

I would take a step back and ask if anybody is successfully running Unoconv (never mind Unoserver) in production? The lack of interest and concern makes me wonder if it's mostly a non issue.

How often does this appear? Is anything not working or otherwise odd (even if it seems unrelated)?
If you log in with an admin account, it just works normally? You don't get taken to the upgrade screen?
The version implies 4.1.16. Is that the version of Moodle you expect to be running? What is the version on the notification screen?
Have you considered upgrading to the latest point release of 4.1 (4.1.18)?
