I wouldn't read too much into the performance recommendations. They're kind of a starting point.

Getting optimum performance and cost benefit out of a non-trivial deployment of Moodle can get tricky. I'd be inclined to ask "which bit of Moodle?". You're going to need web servers, database servers, file stores, caches... you get the idea.

Is it *possible* or is it a good idea?

While you may re-start and get to the end, can you be completely sure that something isn't broken in the upgrade? I'd want to have some idea what went wrong...

I'm not sure what you mean by "container redeployment"?

I'm quite a fan of Docker for certain things but it's not always the answer. What problem are you trying to solve by using Docker?

It's part of the profiles stuff. The profile repo you need to download has its own config file. It's a bit confusing as both the settings and documentation are in several different places.
