I think "realistic tests" might be the hard bit. I guess, simply logging in and displaying a course page gives the cache a reasonably good workout.

It's from *a* Moodle - your University's. Moodle is a software application. There is more than one.
This is just the place where Moodle is discussed. We don't have any access to your particular site. The only people who can help you are the administrators of your University Moodle site.
Open your browser's Javascript Console (F12 then 'console' tab) and recreate the error. Are there any (red) errors in the console? If so, what are they?
You're highly unlikely to break the site by removing them. That's definitely what I would do.
