You need to "uninstall" them. Don't go messing about in the database directly if you can help it!
Go to Admin > Plugins > Activity modules > Manage activities and use the "Delete" link there. This will clean everything up properly.

Yeah there's definitely a UI dissonance between the title and the number. I guess you could either change the title to "Disengagement risk" or change the numbers to their complement 71% --> 29%.
The Outcomes we have in Moodle at the moment are not complete. You can choose a list of outcomes for the site, and you can choose a subset of those for the course, and you can assign outcomes to various activities, and even set grades (via scale) for them in assignments. This helps somewhat for course design and some grading, but there is no transference into competencies, and there is no concept of progress tracking for students based on these.
Others have built systems in Moodle that support these things (such as ELIS and Totara), but we need something generic and simple in core.
Some plans for a stage 2 development of Outcomes in core are being developed. I'd appreciate your thoughts on this direction. It has the potential to go deep into every activity of Moodle that supports any kind of grading.
Indeed it is really clean. I think new developments based on Outcomes could get us towards that.
IMO analysis of what someone has read or how long/often they access materials is completely useless to understand learning and I've always thought so. That's why I've always resisted the many people who have called for stats on "how long people have spent learning". On the web it's particularly meaningless as you don't actually know how long someone's been looking at a screen or what their brain was doing at the time. It competely distracts and misleads teachers.
The best place to look is around outcomes/competencies and the grading (automatic or manual) that is associated around those. I'll post a new thread with some thoughts there.
