Add an icon to a course / course category

Does anyone out there know how to add an icon to a Course / Course category without having to skin the page with HTML?

An example of what I want to do is shown on this site:

http://www.vle-southeast.co.uk/leas/esx/cottesmore/

Notice how you can click on the icons or text in the Course categories and then each course has its own icon.

It looks like it's been built by SchoolAnywhere (http://www.schoolanywhere.co.uk/), who is a Moodle partner. Not being a themes guru myself, I imagine they've customized the code in order to add icons to the course/category display.

Probably had to add another field to mdl_course to hold the icon location, some way to indicate where the file is in the course settings, and then add a bit of code to the course list so the icon will be displayed.

I like the idea, and it gives you a way to dress up the listing. I've got several teachers that are doing this sort of thing on our site, but I've got them putting the icon in the course description.

It looks to me that the icons for each catergory are hard coded, SchoolAnywhere Moodle Themes look quite rigid. If you look at there site and portfolio of Primary VLE's you will find the same theme exists for a number of school (not uncommon with a managed service) but also I beleive that when SchoolAnywhere release a site it comes with predefined catergories.
