I'm new to Moodle and am trying to find a reference to what variables/elements are available in Moodle Themes.
For example I see in a theme that the following code injects the "You are logged in as ... Language DropDown".
<?php echo $menu ?>
Where can I find a list of all these variables/elements?
Specifically I want to separate where the language dropdown is displayed from where the user/login link is. How do I do this? I assume there are other variables I can use in place of $menu.
Also is someone wanted the language display to be a series of small flag icons instead what would they have to do? Is this a core change or can this be accomplished outside the core.

I don't know but yes I agree could be interesting to find out.
Here is a presentation I delivered a while back. It is now a large movie file so be warned. It was originally created in Keynote.
It does loose a fair bit without the commentary, but I tried to design this to also be used as a resource by the attendees and think it still contains enough info to hopefully help you out.
