Hi Genner,
Currently you can only create essay questions using the Journal module. There are plans to introduce this functionality into the Quiz - in fact it is on the list of the Quiz development priorities. Two of those priorities have already been implemented, so, hopefully, one day, the paragraph questions will become a reality, too

I know that the timer has recently come online (praise Martin) but what is the other priority that has been implemented?

I meant multimedia support - embedding mp3's and video files.
