Category totals - YES
Tasks into categories - I don't think so.
In the Grading window there is a drop down box with an item called "Categories and items" but when you click the edit icon there is no option to change/set the category - I suggest you add a feature request to the tracker. The only way I have found is to click on the assignment (etc) and then update it.
