1) Your hack should work OK (I don't think I've assumed anywhere that the grades are always positive).
2) It's percolating in my brain still, but I'm thinking of of ways to define a list of grading systems for the whole site eg:
0 to 100
-100 to 100
not competent, competent
very bad, bad, OK, good, excellent
[freeform text entry]
and making this list available to choose from in each module that supports grading. I got this idea from Ray Kingdon's peer assessment module which is still in development.
In the meantime, to achieve your suggested hack you will probably need to add two fields to the 'course' table and set them in course/edit.html
