Hi, I have been editing my site and I know how you can choose what to display in the center of the homepage in the admin panel, but on a couple of moodle sites I have seen they have both News and Courses in the center, how can this be achieved?

A couple of things could be happening on the sites to which you are referring:
1. They are using Moodle 1.6 which gives you the ability to have any combination of courses, news, or course categories.
2. They have modified index.php to display other things on the site page.
