We would like to set up a course where we release new content one week at a time. Instead of having a complete course up front, students would log in on week 1 for week 1 content, then on week 2 we would have them log in for the additional new week 2 content, and so on for each week. Students would still be able to access previous weeks' content.
- Does Moodle support a course where new content is released on a rolling basis?
- If so, would we set it up just like we were updating an existing course?
- Is there anything students would need to know for this type of experience?

Yes, but not automatically (as far as I know). This is exactly what I did in my courses. I too do not believe that the entire course should be available at its start and that it is much better pedagogy to turn on each new week's material each week. So, what I did was to hide all topics. In week 1, I would turn on the Week 1 topic and email the students it was ready. Of course, if they logged into Moodle, they would see it.

Of course, you need to pay attention to your course so that you turn on a new topic every week, just like every week you expect students to learn. However, some instructors are not good at this.
If you give students a bonus point if you forget to turn something on a new topic, on Monday morning you should have a few reminders that you forgot.

Yes, I suggest you have a "course introduction" video telling students that this is how you run your course.

You can set your course to weekly format which will create a section for each week. You hide future sections as needed. The course will automatically highlight the current week.

My problem with the Weekly format is what happens if your school has a Sping or Thanksgiving Break. How does one handle these natural absences of "weeks?" This is one reason I use the Topics format and identify each numbered week within the topic's title, as shown below.
