How to organise the folders of my SCSS architecture? Pre/Post folder

Hello, 

We are going to create a theme based on boost.

We are thinking about how to make the SCSS architecture (screenshot below), but I see that moodle recommends a Pre and a Post folder.

In which of the two should I put this architecture?

Finally, what is the purpose of the pre and post files? Although I have looked tutorials, FAQs... it is still not clear to me.
