We have set up a module on Moodle for staff development training. Staff need to review a PowerPoint presentation, review and complete the quiz, get 100% and then they will receive the certificate.
However this training is every year, so when a staff member completes it this year, the certificate still shows last year's completion date not the new date of new attempt.
How can we change this please?

Make sure to use the new "Custom certificate" plugin ↗, not the old version ↗.

There are other certificate plugins, which you can find in the plugin directory ↗, for example those from Accredible and Moodle Workplace, and for LinkedIn.
Your question should probably have been asked on the "Custom certificate plugin" forum ↗ * where Mark Nelson, the moderator, is also the maintainer of the plugin. You will surely find help there.
