The double square brackets appear when moodle does not find the English translation for that string. In this case, you have an updated BBB server that offers the new options to protect and publish and your moodle plugin is not up-to-date with these new options.

Anyway, you should get rid of the square brackets in one of these ways:
  1. cleaning/purge the cache of your moodle (the strings will be reloaded)
  2. by adding the two strings to the lang/en/bigbluebuttonbn.php of your bbb plugin if that tokens are missing after the step 1
