When trying to add a new course, I get the below error message.

I don't know how all of the categories have been deleted. But you should be able to create a category. But then all of the courses could then be orphaned. I suggest restoring the whole site from your backup.

Thanks Gareth, I actually righted the error just by rebooting the server.
