Moodle Offline Functionality for Desktop?

Not sure where to ask this specifically.

I work for a company that does safety training and ships out simulators to clients. The safety training is done in Moodle and the client connects our simulators to their computers. Some of these clients don't always have access to stable internet connection so we have a rather convoluted way of currently keeping track of their progress that would be a hassle to explain...but essentially they have an instance of Moodle loaded on their computers that we can remotely access and export their grades and combine with the fully online Moodle grades we have.

My question is : Is there any way to have Moodle function in some capacity offline? By that I mean, clients can still access some courses, quizzes etc. offline, and when their connection stabilizes, an update is synced in Moodle? I know this functionality is in Moodle App, but our simulators are only compatible with Desktop. I'm envisioning all the information we need in one Moodle site and syncs happen regularly so we don't have to bother with accessing client computers the way we do.

I might be far off target, but two ideas are 1) Use a Raspberry PI computer, or 2) Load a copy of Moodle onto the desktop (an AMP installation.)

We have a stripped down 'offline compatible' version of Moodle using Bitnami that is loaded up on our client's computers. But the problem is, when we go through the export grades process, the connection is unreliable. Which was why I was looking on the forums to see if there was some way to sync activity completion/progress rather than download dozens of csv's and try match them to our online records.

Unfortunately our simulators need to be hooked up using USB and LAN ports so they can only be used with computers.

Just for the record, the Moodle Desktop for Mac and Windows was discontinued last May (2021). The last version was based on Moodle 3.7.

Have you tried running the Mobile app in iOS mode on a Mac / or the Android version in Windows 10 with one of the Android emulators (like Bluestacks) to see if it would work with your simulator app? Windows 11 will have native Android support when it rolls out this Fall. If that approach works, it would be a good way to go, since the Mobile app will always have good support.

We will certainly give this a try! Shame about Desktop being discontinued, as it was a more convenient solution for our clients in spotty wi-fi areas. We were also trying to ensure the setup was as simple as possible, since it is actually the client who will have to do some of this configuration for Moodle/our simulators.
