I don't think essay questions support variables, yet. But you could propose this idea as a feature request in the Tracker system.
For example, I want to use variables in the "Description" question type. I created MDL-67355 for this new feature. (Please vote for it.) You might want to create a completely new Tracker item, or add your thoughts about including essay questions to MDL-67355.
