Can anyone give me an overview of what exactly the Certificate Module does please and if possible examples of it is being used.

The module creates a certificate/diploma for the student in a pdf documents, then they can it print out.

Many thanks. Can you make it so that students have to have reached certain criteria e.g. got 50% of a multiple choice quiz correct, before they can access the Certificate?

The certificate module is not a standard part of moodle. You should be able to find a ZIP file by browsing/searching these forums which contains the files you need.
You should unzip the contents of the Zip package into your moodle folder on your server. Then visit your Moodle administration page and the Certificate module will then install.
Make backups first though in case anything goes wrong.
