THe option below will then mean you have to go back into each one when you want them to show and you students will not see their individual assignments grades. But there are other options. You could go to the category settings and just hide the category total until you want to release or you could put a hidden item in each category and then in your general grade settings, select the option to not show totals if there are hidden items. You would have to remove that item when you are ready to release grades.
