Solved.
I figured it out, a silly mistake but I thought that I should post it in case someone else has a similar problem. One of the files created when Shibboleth is installed is attribute-map.xml. When I reviewed it I found that all of the attributes that I needed were listed. What I didn't notice what that the entire block of code had been commented-out. Once I realized this and added entries for my attributes I got past this problem.
