Is it possible to drip content by enrolment date rather than the course start date?
I have users enrolling at all different times, at the moment the drip content is set to open each 7-days but that means some is visible immediately due to the start date of the course.
So user enrolls on week 1 and gets x amount of content on week 2 more content available and so on.
I have been searching for an answer but haven't found anything so far.

What exactly do you mean by 'drop content'? How is it happening at the moment?
This could possibly be achieved by setting a Restriction on the various activities/resources/topics/etc..., however I don't believe by defualt moodle lets you restrict access by course enrolment date, so you might have to look at finding a plugin to do it, possibly this one? https://moodle.org/plugins/availability_days

Course relative dates sounds like what you're wanting, however unfortunately it's only been implemented so far for assignments and weekly course format dates. Please vote for MDL-66044 if you'd like it developed for all activities.
