That's normal. It means that your processing service finished to process (ie. convert to MP4/webm/opus etc) all your recordings and now it stopped. It will resume again once more /var/bigbluebutton/recording/status/sanity/*.done files appear (i.e. raw recording content that has passed sanity check service and it is now ready to be processed).
