The default behavior for new sites is to have the "Change site" button instead of "Log out", so I think it's better that the demo site keeps the default configuration. Here's how an admin sees this setting:
Now, if that should be the default or not is a different thing. We have users with very different use-cases, so it isn't easy to know which defaults are the best.
If you want you can post your suggestions in the tracker which is the place we use to manage new features an improvements. The project for the mobile app is called MOBILE and there is one component called UX (User eXperience) that's appropriate for this kind of things.
