I do not think it's possible to do this directly.
You can do it with a little bit of work as follows:
- Quiz -> Results (Grades) -> Download table data as Microsoft Excel (.xlsx)
- In Excel, replace all "-", which mean Not answered, with negative values.
- Import the modified grades back into Moodle (see Grade import).
