I actually wanted to share an answer i received that will fix my retiring courses issue. Apparently Moodle 3.6 has a feature called Freezing. You can create a catalog, add old courses and select to freeze them. The course will still show on the users dashboard but everything inside the course will be read only, which is perfect for our corporate environment. We want our employees to have access to old training material but not be able to finish a course past a due date.
