Hi there. The reason we didn't enable stealth activities on the School demo site is because we like to leave the site as standard as possible - that is, stealth activities are disabled by default, so we left them disabled. Educators who come to explore Moodle for the first time on the School demo site have plenty of other settings to keep them interested. However, as there is admin access on our Sandbox site, demo.moodle.net, it's fine to enable it there for an hour (and you could even back up and restore some courses from the School demo with user data) if you wanted a more authentic view of stealth activities.
