I have a faculty member who is looking to do something I have never encountered before. I was wondering if anyone in our Moodle community knows of a plugin or a block that could do this.

"How would I upload a document to Moodle where students will have to choose an item, then once they have made said choice, that item is removed from the list? Is this possible?"
Hi Donna,
You should be able to do most of that with the built in Choice activity. You can give students a list of items and set how many students can select each item. So with it set to one, it becomes un-selectable to everyone else, but is still visible to everyone.
