Moving Moodle from Linux / Apache to Windows XP with IIS

I am having problems setting up a server and am planning on starting my semester on a colleague's Linux server.  Will I be able to backup the course and move it over to my server when it is repaired even though I am using IIS and WinXP?

That should make no difference AFAIK because the data itself is not Operating System specific. You just need to make sure that you that you back it up correctly and it should restore OK. I recommend you do a full Moodle database backup rather than backing up courses via the Moodle backup tool.
