I've locally modified multiple choice to allow one additional setting:
It assigns the selected grade if no choice is checked at all.
This is something we would love to see in mainstream moodle. I'll gladly start a PR and see this through, unless there is some reason why this won't be accepted on pedagogical grounds?

I would suggest putting it in tracker with the fix and see what happens...
