Our moodle site was recently upgraded by our provider, since than when creating a grid format course tutors are requested to put in an extra field see below:
Is there anyway this setting can be in place like before?

There is a bug in old versions where this is not populated by the default. So... what version are you using please? This was fixed in CONTRIB-6655 for M3.0+ versions.
Or just spend 2.5 seconds picking a colour with the colour picker to the right of the box and save the settings.
