right now the only way to achieve this is with a custom app since we don't support course formats yet. Supporting course formats is in our mid-term roadmap, you should watch this issue:

Unfortunately our core team do not have the resources here to help people use the open source code version to build custom apps. We provide a service where we can customise the app for anyone who needs it including the Push notifications (Airnotifier) service management. unfortunately there's no solution yet, but we'll fix it for the 3.5 version of the app. That version is planned to be released in May.
We're planning to support course formats for that version, and also we'll probably get rid off the sections page and always show the course contents directly.

Once I click on Course page - I should be able to see many Quizzes.
I see, that I can add many Quizzes to Site Home, without having to navigate to Course.
How do I make "Site Home" as my entry/landing page for Moodle Mobile App, please?

Hi,
you can configure that in:
Site administration > Appearance > Navigation > Default home page for users
If you set it to Site, then users should see the Site Home once they login in the app. They might need to restart the app or do a logout/login to make it work the first time.
Please notice that this setting affects Moodle in the browser too. If they login in a browser, they will see the Site Home too instead of the dashboard.
