I want to retrieve an assignment from a course that is closed and the student is no longer enrolled in. Is it possible?

It depends on how the user was unenrolled. Go to "enrolled users" in the administration box of the course, then click "enroll users" in the top right portion of the page. then search and select the user you're looking for, and under "enrollment options" check "recover users old grades if possible":
