Depending on your moodle version, there are some restrictions on the short names of the custom profile fields (e.g,, in Moodle 2.6 they have to be all lower case, and cannot end in a number), but other than that, they should work.

, from Moodle 2.6 on you can use custom profile fields in the LDAP mapping settings.
