Is it possible to backup a course created and working in 1.5 and restore it in 1.4 (from a test to a production server) or do the changes make this inadvisable. I am reluctant to find the way I usually do (by trial and error for fear of destabilising production server). If I do what will happen to unsupported features (like an online assignment)?

I don't recommend you to try it!
Whereas forwards compatibility is an objective of the backup/restore functionality, backwards one isn't computable in a lot of places and it could make absolutely strange things!
