I have a flipped SAT/ACT classroom that requires students to watch 65 short videos (Vimeo) and answer 1-5 questions for each one then print their answers for themselves and submit their answers electronically to me.  I need to track each individual student's progress through the course tracking which videos have been watched and which short quizzes have been submitted.  Can Moodle do this for me?  Thanks.  If Moodle can do this, I'll take the time to learn how.

Yes it is possible in moodle by using moodle advanced feature completion tracking and conditional access. For this first you need to create course in moodle and then set up activities in it. After that you can set up activity completion conditions for them.Check the below links http://docs.moodle.org/25/en/Activity_completion

Then from the activity completion report you can check the status for each student for each activity . It is available here Navigation > My courses > Course name > Reports > Activity completion . Check this link http://docs.moodle.org/25/en/Using_Activity_completion .

Another option is to setup a lesson.  That way they can then watch the videos, answer the questions, and then view a report of the lesson(s), which indicate who has completed, who hasn't, and how they scored.
