Just found this great plugin for wordpress multisite called Pressbooks. Transforms wordpress into a epublishing tool where multiple people can add chapters and author a book.
Using wordpress and Moodle LTI you can sync up your students and teachers via Moodle and have them automatically added as authors over on the Pressbook install with each new instance of the external tool creating a brand new book.
