I had already tried re-creating the Authenticated User role, I reset the role, checked the User Policies, and all settings looks good
Another thing that is very strange is (and I don't know if this is how it is supposed to work or not) that I had reset the student and teacher roles thinking it was a permission problem, and by default students and teachers were not allowed to access many of the course assignments. I had to go in and allow viewing of specific assignment types.
