Hi,
I have attemped to go to the certificate settings, and then 'locally assigned roles', so that i can specify the names that appear (so all my non-editing teachers dont appear), but they still all appear, although I have manually set only one person with the teacher role in the certificate.
Any clues?

Have you checked permissions for non-editing teachers, if not check from settings > certificate administration > permission ,
Capability- 'Be listed as a teacher on the certificate if the print teacher setting is on ' if you dont want non-editing teacher please remove her from the columm roles with permissions.
