I'm not sure about the attendance "sessions", but to make sure the person is not visible in the participants list:
- Create the support staff role.
- When assigning the user to this role, click the little checkbox in between the two lists, labeled as an eye (I think). This will make their role assignment hidden to other roles. (based on capability settings)
