It says in the documentation that the Assignment (text) can be used as a private student only space, and also as a student/tutor space. But I can't find anywhere how to set each one up. I think setting up an assignment the way it is presented, is a student/tutor kind of assignment. But how does one set it up, so that it's a student only space?

Dear Mark,
After creating the Online Text assignment, go back and update it 'update this assignment' or 'update' button. There you will find an 'override permissions' tab (might have to be an admin or the creator of the assignment). Then you can set 'Teacher' roles etc. to have 'prevent' for the 'view assignment' permission.
